I would try to stand my ground over incest art, not give a long-winded explanation, and state that I like fictional incest and that's that if someone questioned me over it. However I am very shy, so a person questioning me over my artwork would be unsettling to me, especially irl. I hate when writers and artists write these huge essays in response to hate comments. It makes them look insecure and vulnerable to more hate, as tempting as it is.

When asked to explain or defend anything you like in a way that's seen as problematic I like to redirect the conversation. This is harder to do when shy but it's important to shrug off their questions by just stating that's what you like. No big deal, you know? Follow this up by asking what the questioner likes but in a way that appears genuine and not judgemental. Be insistent and keep control over the conversation by asking increasingly more personal questions.
When you do this you'll find you will either be left alone or the person opens up when they find you not to be judgemental. They care less that noncon or incest is problematic when they've shared with you that watching men cry turns them on.
